Heather’s Protein Chickpea Blondie

2 scoop 60 grams Vanilla Protein Powder ( I use Quest)

1 egg – Large

4 oz Unsweetened Apple Sauce

1 tbsp Chocolate Chips

½ cup Peanut Powder

1-½ cup (130g) Garbanzo Beans (Chickpeas)

¾ tsp Clabber Girl

½ tsp Leavening agents, baking soda

¼ tsp plain salt

2 tsp Vanilla extract

 

Preheat oven to 350 degrees. Grind the chick pea in a food processor until smooth. Mix in egg and applesauce, blend well. Then add dry ingredients mixing well the entire time. After the dry and wet ingredients are well mixed, then fold in the chocolate chips. Spray an 8×8 glass baking dish with Pam spray. Pour the mixture into the glass baking dish and bake for 25-30 minutes. This makes 6 good size pieces.

Heather’s Homemade Hardshell

1 tbsp organic coconut oil

12 grams or 2 tbsp premium dark cocoa powder

2-3 stevia packets

 

 

Peanut Butter version:

 

1 tbsp organic coconut oil

30 grams or 1/4 cup peanut powder

2-3 stevia packets

 

 

Warm the coconut oil to get it to be a liquid. Slowly blend in the cocoa powder or the peanut powder until smooth. Then slowly stir in the stevia or powdered sweetener of choice. Pour over the frozen dessert or smoothie. Let it set in the freezer for 1-5 minutes while it hardens and enjoy.

Heather’s (Almost) Every Night Smoothie

Here’s what you’ll need:

 

2 cups frozen, unsweetened almond milk ice cubes (pour 2 cups of almond milk into an ice cube tray)

1 cup liquid, unsweetened almond milk

1 scoop vanilla whey protein powder (Quest or other brand)

1/4 tsp pure peppermint extract

3-4 Stevia packets, sweeten to taste (taste smoothie and make sure it is sweet enough for you – add more sweetener if you want to)

 

 

 

Here’s what you’ll do:

Put everything in your blender and blend on high until it is a smooth and creamy smoothie. It makes a very large portion and is only about 190 calories. Sometimes I cut up a mint chunk Quest bar and mix it in for some texture. I am in love with this dessert!

You can also try various flavor combinations using different extracts and protein powder flavors.

Heather’s Pumpkin-Spice Protein Ice Cream

Pumpkin-Spice Protein Ice Cream

Here’s what you’ll need:

 

1/2 cup Greek plain yogurt

1 scoop of salted caramel Quest protein powder (or appropriate substitute)

3 cups of almond milk (unsweetened)

1 tsp pumpkin spice extract liquid (made by McCormick or Watkins)

4-6 packets of Stevia

1/2 tsp Guar gum

1/2 tsp Xanthan gum

1 tsp vanilla extract

1 tsp cinnamon

1/2 cup pumpkin puree

 

Here’s what you’ll do:

 

Mix everything into a bowl. Next, you need to blend the ingredients. I use an immersion blender to get a really nice mixture. If you don’t have an immersion blender, then pour the contents of the bowl into your blender or food processor. After blending, pour contents into your ice cream maker and follow manufacturer’s instructions.

 

Add topping like dark chocolate hard shell or sugar-free chocolate syrup.

Salted Caramel Chocolate Chip Pumpkin Custard

Here’s how to make this delicious, and healthy, dessert:

In a bowl, mix 2 scoops of Quest salted caramel protein powder with one egg, 1 cup unsweetened almond milk, one can of pure pumpkin (15 oz), 1 tsp cinnamon, 1 tsp vanilla extract, 1 tsp pumpkin pie spice, and 2 tbsp mini, semi-sweet chocolate chips. After mixing all the ingredients together, pour contents of bowl into two Pyrex bake ware, or one 9-inch pie plate. Top it off with chocolate chips. Bake at 350° for 30 minutes.
