For all the moms out there: Happy Mother’s day! Rest, you deserve it!

I interviewed an awesome cook this week. Her name is Kristi and she created and runs the excellent healthy cooking blog Mother Rimmy – Cooking Light, Done Right.

And while the interview will not be released for several weeks, I had to share some of her fantastic recipes! This week, I’m the most excited about trying the chicken-strips recipe I found on her site.

Breakfast Meals

  • Cinnamony French Toast (These are leftovers from our breakfast dinner night)

Lunch Meals

  • Salad:
    • Best Chicken Tender leftovers
    • hard boiled egg, lettuce
    • tomato
    • cucumber
    • carrots
    • light-blue cheese dressing

Dinner Meals

  • Breakfast Dinner:
    • Egg scramble: green pepper, onion, and mushroom
    • Hash browns
    • Cinammony French Toast (I’ll double this and save it to use as breakfast leftovers.)
  • Best Chicken Tenders (I’m excited to try these after talking to Mother Rimmy and hearing how good they are. I will double the recipe and use the extra for salads at lunch.)
  • Asian-Chicken Wraps
    • Apple Slices with Sugar-free Caramel-dipping sauce (Smuckers brand)
    • Leftover night (We have at least one “leftover night” every week to clear out the fridge and prevent wasting food.)
