My Weight Watcher’s weekly menu for the week:

Breakfast Meals

Click the links for recipes (if available).

  • Egg skillet: 2 eggs, green pepper, mushroom and onion
  • Oatmeal: cinnamon and Splenda

Lunch Meals

Click the links for recipes (if available).

  • Salad mix-tomato, green pepper, mushroom, roasted chick peas, hard boiled egg, olive oil, balsamic vinegar  (I do NOT use the 2 tablespoon of olive oil. I only use 1/2 teaspoon. I also use cooking spray on the baking sheet to prevent the chickpeas from sticking.)
  • Leftovers

Dinner Meals

Click the links for recipes (if available).

  • Black bean soup and dinner rolls (This recipe calls for dry black bean,s but I will use canned black beans instead. To make it thicker, I do not drain the black beans, using the liquid they are packaged in.)
    • Brown rice with sauteed, baby-bella mushrooms, onions, and garlic
    • Side Salad
  • Breakfast Dinner ( My kids love this!)
    • Pancakes (This is for the kids and we use sugar-free syrup.)
    • Omlette (for me and the Hubbs): eggs, mushroom, onion, green pepper, and 2% sharp chedder
    • Bacon
  • Spaghetti and Meatballs
    • Whole wheat pasta
    • Homemade spaghetti sauce
    • Turkey meat balls
    • Side salad
  • Leftovers (We have at least one “leftover night” every week to clear out the fridge and prevent wasting food.)

Snacks

Click the links for recipes (if available).

  • Low-fat ice cream sandwiches
  • Pumpkin smoothie (I will use canned pumpkin for this since I don’t have pumpkin butter.)
  • Homemade popcorn
  • Cookie-dough ice cream (This is a special treat for our date night!)
  • Fat-free, sugar-free yogurt
  • Hard-boiled eggs

Heather do you eat ice cream every morning? (HEHE) and what brand is it that is 4 servings = 1 pp?

    • HeatherRobertson says:

Thanks for reading my food journal. I would love it if I could have ice cream every morning for 1pp. However, it is my coffee cream. I get the Aldi’s Sugar Free Vanilla and it is 4TBSP for 1pp. I will clear that up in next weeks food journal. Thanks for taking the time to let me know!
