Weekly Menu Plan: April 30 – May 6, 2012

This week I bought a slew of apples, so I’m excited to try the apple snack recipes that I found. I love simple, healthy, snack recipes that the kiddos will eat.

I love to doctor up bottled-pasta sauce, so my attempt at making it from scratch will be an awesome adventure.

Breakfast Meals

  • Oatmeal (I tried this before my race on Sunday and fell in love.)
    • 1TBSP Honey
    • Cinamon
    • vanilla extract
    • ½ tsp salt
  • Egg scramble, 3 egg whites, onion, bell pepper and mushrooms
  • Fruit salad

Lunch Meals

  • Salad
    • Ham

    • strawberries
    • lettuce
    • pineapple
    • balsamic vinegar
    • olive oil
    • Truvia
  • Fruit salad
  • Leftover black bean soup

Dinner Meals

  • Crock pot Buffalo-chicken lettuce wraps (Win-Win! My hubby loves buffalo chicken and I love to use my crock pot!)
    • corn-on-the-cob (The kiddos have fallen in love with corn-on-the-cob, so you’re going to see this more often.) 🙂
    • fruit salad
  • Black Bean Soup (I will double or triple this recipe and eat it for lunch and freeze individual servings for another week.)
    • ham sandwiches w/ lettuce, tomato, mustard
  • Honey-spiral ham
    • fruit salad
    • baked sweet potato
  • Order dinner in ’cause it’s Date night!
  • Leftover night (We have at least one “leftover night” every week to clear out the fridge and prevent wasting food.)
