What does it mean that when researching these weekly menus I always seek out desserts first?
I think it motivates me for the week!

Breakfast Meals

- Omelet: egg whites mixed with onions, mushrooms and bell peppers
- Breakfast smoothie
- 1 cup skim milk
- 1 cup frozen strawberries
- 1 tsp vanilla extract
- 1 Truvia packet
- Mix in blender until smooth-Yummy!
- Leftover Pumpkin Waffles
Lunch Meals

- Salad:
- lettuce
- chicken thigh
- hard-boiled egg
- chickpeas
- 1 tbsp grated parmesan cheese tomato carrots
- dressing-Vinegar, oregano, salt, 1tsp olive oil, fresh lemon juice
- Vegetable Beef Soup and grilled cheese (I love soup! It’s a meal in a bowl!)
- Leftovers
Dinner Meals

- Chili-Beef Taco night
- Corn
- Skinny Sloppy Joe (I may use lean ground turkey instead of beef)
- Skinny Texas Cheese Fries (I won’t use the jalapeño for the kids and me)
- Fruit salad
- Chicken and Sweet Potatoe stew (I’ll make this one in the crock-pot.)
- Breakfast Dinner (My kids ask for this every week)
- Pumpkin Waffles (I double or triple recipes like this and freeze the leftovers as a quick breakfast for the kids.)
- Hashbrowns
- Eggs with cheese
- Fruit
- Crock-pot Salsa Chicken Recipe
- brown rice
- Sour cream
- cheese
- Leftover night (We have at least one “leftover night” every week to clear out the fridge and prevent wasting food.)
Snacks

- Pumpkin Ice Cream in Homemade Ice Cream Bowls (I will not eat the bowl but my kiddos will love it)
- Fat-free sugar free pudding prepared with skim milk
- Fat-free cool whip (I’m letting it back in the house… let’s see how I do!
)
- Yogurt fruit dip (The kids will make this as a D.I.Y. snack. I’ll use regular peanut butter and they’ll more than likely dip strawberries and pear slices.)
